Why aren’t all validators listed as staking options? The list doesn’t have every validator I can see on Binance’s staking page.

Good question, I just had the same. Are some validators not supported by TrustWallet or why is it like that? At the moment I have only 15 active validators in the list. That’s very bad, it seems like TW is supporting some validators and rejects others which is clearly not in the sense of decentralization.
